Tea is the second most consumed beverage after water. There must be something special about this fermented beverage. If we are to discuss the tea and the different types of teas, first we have to cover what it really is. What is tea? Chinese Tea is basically the dried leaves and processed within a single species of plant called Camellia sinensis. Interestingly, herbal teas or herbal teas are not really tea, but simply dried flowers and / or herbs.
Although all teas come from a single species, There are three main varieties:
China – Leaves small and usually grows at higher altitudes.

Oolong tea is nothing more than the leaves of Camellia sinensis that have been processed in some way. It is one of four types of tea (white, green, oolong and black).
Oolong teas are the most difficult of the four types of teas to process. The best way to describe oolong tea is that they are in somewhere in between green tea and black. This is because they are only partially oxidized during treatment.
What is the processing of tea?
Processing tea is generally considered the art of tea. It is where nature creates many of the subtleties of flavor, body, and in general.
In its most basic, is taking the raw green leaves and deciding whether or not and how much oxidation (or fermentation) should take place before drying out.
Tea leaves have enzymes in their veins. When the blade is broken, beaten, or crushed, enzymes are exposed to oxygen resulting from oxidation. The amount oxidation depends on the amount of enzymes that are exposed and for how long.
Oolong Tea Treatment:

Then the leaves are thrown into baskets to bruise the edges of the leaves. This causes bruising the leaves to oxidize only partially because only part of the enzymes are exposed to air.
Then steamed leaves in order to neutralize the enzymes and stop the oxidation. Oolong tea may have varying degrees of oxidation. Some are closer to tea black, and some are closer to green.
After that, a final drying takes place. From there, it will be sorted, graded and packed.
